CHEESE
Cheese is another one
of Europe’s oldest traditions. The earliest indication of cheese making is about
7500 years old. At that time curds were drained in containers made of unbaked pottery or wickerwork. The oldest remains in France were found on the banks of the lake at Neufchâtel, near Rouen. In the 5th century AD Roman soldiers and athletes were fed a diet of cheese,
wheat bread and figs. 14th Century: the inhabitants of the village of Chaillot, near Paris, grazed their
cows on "les îles aux vaches", not far from where the Eiffel tower now stands!
In 1666, a decree by the Parliament of Toulouse became the first legal document to refer to cheese - in this case,
Roquefort. 18th Century: a dairy
opened on the Champs-Elysées. Lavoisier reckoned that Parisians consumed 3 kilograms of cheese per head, every year (mainly
Brie).

THE REAL FRENCH BAGUETTE
Serving one of Europe's oldest traditions is the Baguette made with 100% pure flour along with our
other various fresh breads including Golden Grain, 7 Grain, Whole Wheat, Rye, French Boule and Pain de Mie bread, all served fresh
daily.
Baguette is a
derivative of the bread developed in Vienna in the middle of the 19th century. At that stage steam ovens had just been brought into
use, enabling loaves to be made with a crisp crust and the white centre, similar to today’s baguettes. Long Then
in 1920 a law was passed preventing bakers from working before 4am. This made it impossible to make the traditional
loaf in time for customers' breakfasts. The longer, thinner baguette solved the problem because it could be prepared and baked
much more rapidly.
